Cheese Balls Gone Batty

1.25lb.extra sharp cheddar,

1c.sour cream,

¼c.unsalted butter,

⅓c.dry sherry,

*dash of cayenne,

2c.poppy seeds,

1jarred pimentos,


1Process all ingredients in a food processor until smooth. Place in the refrigerator for 1 hour to harden.

2To make little bat bites, roll in poppy seeds and use small triangles of blue corn chips to make wings and red pimentos for eyes. Serve on chips or spinach leafs.
