Ingredients

1pkg. (6 oz.)Hill Country Fare Yellow Corn Bread Mix,

1 ½tsp.cayenne pepper,

½c.Central Market Organics® Roasted Garlic Mayonnaise,

1container (16 oz.)H-E-B Fresh Gulf Oysters,

*Hill Country Fare All Natural No-Stick Canola Spray,

4H-E-B Bakery Submarine Rolls, sliced lengthwise,

½head lettuce, shredded,

2large tomatoes, thin sliced,

1red onion, thin sliced, rings separated,

Directions

1Spray a grilling mesh with nonstick cooking spray and place on a foil-lined baking sheet. Heat gas or charcoal grill to medium heat (350°F).

2Combine corn bread mix and ½ teaspoon cayenne pepper in a medium-size bowl, stir well, and set aside. Combine remaining 1 teaspoon of cayenne pepper with garlic mayonnaise and set aside. Drain oysters, dip into corn-bread mixture, and arrange on prepared grilling mesh. Spray the breaded oysters with Hill Country Fare Canola No-Stick Spray on both sides.

3Grill oysters for 3–4 minutes with lid down, until golden brown.

4Spread 1 tablespoon mayonnaise mixture on both cut sides of each submarine and arrange 4 grilled oysters on bottom half of each. Top oysters with shredded lettuce, sliced tomatoes, and red onion. Close sandwich with top and slice each in half.
