2large or 3 medium sweet potatoes (about 2 pounds),
1(12 oz.) bagfresh cranberries,
1/2c.fresh or prepared orange juice,
1Wash potatoes; prick each side in 4 places with a fork. Place in a microwave-safe dish; cover with a lid or paper towel. Microwave on High 6 to 8 minutes or until done. Set potatoes aside until cool enough to handle; then peel potatoes and cut into bite-size pieces.
2 Melt butter in a 4-quart pot over Medium heat; stir in brown sugar to dissolve. Add potatoes, cranberries and orange juice. Toss to mix. Stir gently and heat until cranberries begin to pop open and potatoes are hot. Season with salt, to taste.
