2½c.H-E-B The Baker’s Scoop™ All Purpose Flour,
1½tsp.Hill Country Fare Baking Powder,
1c.H-E-B Extra Light Olive Oil,
1c.Hill Country Fare Semisweet Chocolate Chips,
2c.H-E-B Powdered Sugar, packed,
3H-E-B Large Eggs,
½c.H-E-B The Baker’s Scoop™ Cocoa Powder,
2tsp.Hill Country Fare Instant Coffee,
⅓c.H-E-B Powdered Sugar, to sprinkle on top of cookies,
1Heat oven to 350°F. Line 3 cookie sheets with H-E-B Parchment Paper and set aside.
2Sift together flour and baking powder and set aside.
3Combine olive oil and chocolate chips in a microwave-safe bowl. Cover with plastic wrap and microwave on high power for 1 minute. Stir until chocolate is melted.
4Combine 2 cups powdered sugar and melted chocolate in a mixer bowl. Mix on medium speed for 2 minutes. Beat in eggs, one at a time, on medium speed (about 1 minute). Add fl our one cup at a time on low speed (about 2 minutes). Stir in coco powder and instant coffee.
5Drop dough by rounded tablespoons (about 2 tablespoons each) on prepared cookie sheets. Sift powdered sugar onto each cookie. Bake for 17 minutes or until golden brown.
