2cedar planks (soaked in water 1 hours prior to using),
4(8 oz.)salmon filets,
1Tbsp.fresh grated ginger,
1Tbsp.minced garlic ,
2tsp.ancho chili powder,
•juice of 1 lemon,
•zest of 1 lemon,
1To make marinade, lightly whisk together brown sugar, soy sauce, ginger, garlic, ancho chili and lemon ingredients in a mixing bowl.
2Place fillets in a sealable bag and add marinade. Turn bag and coat salmon with marinade mixture. Let fillets sit for 2 to 6 hours, turning bag occasionally. Refrigerate until ready to use.
3Preheat grill to medium heat (350-400°F).
4Place cedar planks on the grill; then place marinated salmon fillets on the planks.
5Cover and cook for roughly 12 minutes or until salmon reaches an internal temperature of 150°F.
