Black Bean Soup with Sour Cream

Ingredients

2 cans (15 oz.) black beans,

1/2 cup diced onions,

1/2 cup diced ham,

1 Tbsp. light olive oil,

1 container (32 oz.) H-E-B Reduced Sodium Chicken Broth,

2 tsp. H-E-B Texas Originals Borracho Beans Spice Blend,

1 container (8 oz.) sour cream,

Directions

1 Puree 1 can of black beans. Set aside.

2 Sauté onions and ham with olive oil in a 2 quart pot for 3 - 5 minutes.

3 Add pureed beans and can of whole beans. Pour in chicken broth.

4 Add seasoning and boil for 15 - 20 minutes. Reduce heat and whisk in 8 ounces of sour cream.
