1cupstone ground cornmeal,
1/4teaspooncrushed red pepper flakes,
1/4cupshredded Parmesan cheese,
*nonstick cooking spray,
1Coat a 2-quart covered microwave-safe casserole with nonstick cooking spray. Whisk cornmeal, water, chicken broth, salt and red pepper flakes in casserole.
2Cover casserole and microwave on high 12 minutes; stir after 6 minutes.
3Remove from microwave and uncover; stir in cheese. Let stand 5 minutes before serving. Polenta will thicken as it cools.
