Cheddar Bacon Mashed Potatoes

4green onions, chopped,

8slicesH-E-B Fully Cooked Bacon, chopped,

1cupH-E-B Cheddar Cheese, shredded,

1cupH-E-B Fresh Buttermilk Ranch Dressing,

2poundsYukon Gold potatoes,


1Spray a 2-quart microwave-safe baking dish with nonstick cooking spray; set aside.

2Mash and peel potatoes. Cut potatoes into 1 1/2-inch cubes and place in a microwave-safe bowl. Add 1 1/2 cups water and cover potatoes with plastic wrap. Microwave potatoes on High power for 12 minutes or until tender. Drain the potatoes and mash with a potato masher or electric mixer.

3Add the H-E-B Fresh Buttermilk Ranch Dressing, shredded cheese, bacon, and green onions to the mashed potatoes; stir to combine. Pour the mashed potatoes into the prepared baking dish and cover with plastic wrap. You can refrigerate these potatoes over night or heat in the microwave for 4 minutes until steaming hot before serving
