Spicy Catfish With Bell Peppers And Onion

Ingredients

2H-E-B Marinated Cajun Catfish Fillets (about 1 pound),

1medium onion, sliced,

1/2red bell pepper,

1/2green bell pepper,

1jalapeno pepper, seeded,

1/4cupflour,

2tablespoonsoil,

2tablespoonswhite wine vinegar,

Directions

1Cut onion in half, then into thin slices. Cut bell peppers into thin slices. Seed jalapeno and slice into rings.

2Cut each fillet into 2 portions. Place fillets on a sheet of wax paper. Dust with flour and turn to coat both sides; shake off excess.

3Heat oil in a large non-stick skillet over medium-high heat. Cook fish 2 to 3 minutes per side, until color turns from clear to opaque (white). Remove to a plate and keep warm.

4Add onion, bell peppers and jalapeno to skillet; Sautèacute; 8 to 10 minutes or until tender. Stir in vinegar and heat 1 minute. Season mixture with salt and pepper. Spoon over fish and serve
