1cupchopped green pepper,
2cloves garlic, minced,
1can(16 oz) whole tomatoes,
1bay leaf, chopped,
1/2teaspoonground red pepper,
1/2teaspoondried oregano, crushed,
2poundscatfish fillets, cut into bite-sized pieces,
1package(10 oz) frozen sliced okra,
4cupshot cooked rice,
1In a large Dutch oven, cook celery, onion, green pepper and garlic in hot oil until tender.
2Stir in beef broth, tomatoes, bay leaf, salt thyme, red pepper and oregano.
3Bring to boil; reduce heat. Cover and simmer for 15 minutes.
4Add catfish and okra to kettle. Return to boil.
5Cover and simmer for 15 minutes or until fish flakes easily. Remove and discard bay leaf.
