1 1/4poundsAlaskan cod fillets,
*non-stick cooking spray,
1/2medium onion, thinly sliced,
1/2cuplight sour cream,
1/2cuplow fat mayonnaise,
4teaspoonsfresh lemon juice,
1/4 to 1/2teaspooncurry powder,
1Heat oven to 375 degrees.
2Cut cod into 4 portions. Coat a shallow baking dish with cooking spray. Scatter onion over bottom of dish and top with cod fillets.
3Stir sour cream and remaining ingredients together in a bowl until smooth. Spread sauce evenly over top of cod.
4Bake fish 20 to 30 minutes, depending on thickness, until center turns opaque. Garnish with thin slices of lemon and parsley, if desired.
