Ingredients

3/4cupyellow cornmeal,

1/4cupflour,

2teaspoonsalt,

1teaspooncayenne pepper,

1/4teaspoongarlic powder,

4catfish fillets,

*vegetable oil,

Directions

1Combine cornmeal, flour, salt, cayenne pepper and garlic powder.

2Coat catfish with mixture, shake off any excess.

3Fill 12-inch skillet half full with vegetable oil.

4Add catfish in a single layer and fry until gold brown, about 5 - 6 minutes, depending on size. Remove and drain on paper towels.
