Ingredients

3/4cupyellow cornmeal,

1/4cupflour,

2 tsp. salt,

1tsp.cayenne pepper,

1/4tsp.garlic powder,

4catfish fillets or whole catfish,

*vegetable oil, for frying,

Directions

1Combine cornmeal, flour, salt, cayenne pepper and garlic powder.

2Coat catfish with mixture, shaking off excess.

3Fill deep pot or 12-inch skillet half full with vegetable oil.

4Add catfish in a single layer and fry until gold brown, about 5-6 minutes, depending on size.

5Remove and drain on paper towels
