1 1/2 to 2Halibut steaks, cut 3/4 to 1-inch thick,
1/2teaspoonEach salt and pepper,
4teaspoonsfresh lemon juice,
1Blend flour, salt, pepper and nutmeg in a shallow bowl.
2Dust each side of halibut steaks with flour mixture.
3Heat oil and butter in a large, non-stick skillet over Medium-High heat.
4Cook halibut 4 minutes per side if ¾-inch thick, or 5 minutes per side if 1-inch thick.
5Combine orange juice, Worcestershire and lemon juice; add to skillet.
6Raise heat to High and bring liquid to a boil.
7Cook for 2 minutes until sauce thickens and glazes fish.
8Spoon sauce over fish while cooking.
