Chinese Shrimp Fried Rice

1/4poundshelled, deveined Shrimp,

1cupbean sprouts,

2green onions,

3cupscold cooked rice,


2tablespoonsoy sauce,

1/2teaspooneach sugar and salt,


4strips bacon,


1Cut shrimp into 1/2-inch pieces and chop bean sprouts and onions.

2Sprinkle rice with cold water and stir to separate into individual grains.

3Mix soy sauce, sugar and salt in a small bowl.

4Beat the egg.

5Fry bacon in a large, deep non-stick skillet over Medium-High heat until crisp.

6Remove, drain and crumble.

7Reserve 2 tablespoons bacon drippings.

8Pour egg into skillet and scramble.

9Remove, cut into thin strips and set aside.

10Heat reserved bacon drippings.

11Stir fry shrimp 2 minutes.

12Stir fry rice, sprouts, onions and bacon with shrimp 3 minutes more.

13Pour soy sauce mixture over rice; add egg and quickly stir to blend.

14Serve hot
