4large squid, cleaned,
1box (5.7 oz)risotto, tomato basil flavor,
1large tomato, chopped,
1/2teaspoongrated lemon rind,
1Cut squid into 1-inch square pieces. Set aside.
2Prepare risotto according to package instructions.
3Combine tomato, parsley, garlic and lemon rind in a bowl and set aside.
4Stir squid into hot risotto during the last minute of cooking.
5Remove from heat and stir tomato-parsley mixture into risotto until blended. Serve immediately.
