2scarlet snapper fillets (about 1 pound), skin removed,
1/4cupblackened seasoning blend,
1tablespoonsweet pickle relish,
2teaspoonsfresh lemon juice,
1/4teaspoonhot pepper sauce,
1Cut fillets into 4 portions.
2Heat a large, heavy skillet over medium-high to high heat 5 minutes, or until skillet is very hot but not smoking.
3Meanwhile, brush top sides of fillets with melted butter. Sprinkle evenly with half the blackened seasoning blend. Turn fillets over; brush second side with butter and sprinkle with remaining seasoning.
4Brush skillet with remaining butter. Sear fish 2 to 3 minutes per side, or until center turns from clear to opaque (white) and fish just begins to flake with a fork. Serve immediately.
