2largeCans pink salmon,
1cupBread crumbs plus an additional cup for coating,
4Tbsp.H-E-B blackened seasoning,
1Combine salmon, eggs, peppers and 1 cup of bread crumbs in a large bowl. Mix very well and set aside.
2In a shallow dish mix together remaining cup of bread crumbs and seasoning.
3Warm 2 tablespoons of oil over medium heat in a non stick skillet.
4Take 2 heaping tablespoons of salmon mixture and form into a patty. Bread patty with seasoned crumbs and place in skillet. Do not over fill skillet with patties. Cook on each side until golden brown
