1filletfresh salmon fillet (1 1/2 to 2 pounds),
*nonstick cooking spray,
1 to 2tablespoonschopped fresh rosemary leaves, according to taste,
2teaspoonsfresh lemon juice,
1teaspooncoarse ground black pepper,
1Heat oven to 450 degrees. Spray a large baking sheet with nonstick spray. Place salmon on baking sheet, skin-side down.
2Combine rub ingredients in a small bowl. Spread rub evenly over top of salmon.
3Bake salmon about 15 minutes, or until the color turns from translucent to opaque and fish just begins to flake with a fork. Do not over cook.
4Cut fillet into portions, just down to the skin. Lift fish from skin with a spatula; remove to a plate. Serve immediately.
