Ingredients

18 oz. bag Fresh Express® Riviera Salad Blend,

15 oz. bag Fresh Express® Spring Mix,

2/3c.dried cranberries,

2/3c.chopped dried apricots,

1/3c.chopped chives,

4oz.goat cheese crumbles, optional,

*Orange Vinaigrette Dressing:,

1orange, for juice & zest,

2Tbsp.red wine vinegar,

2Tbsp.extra-virgin olive oil,

2Tbsp.honey,

2tsp.Dijon mustard,

2tsp.McCormick Poppy Seeds,

Directions

1For dressing, grate orange peel on the fine edge of the grater to make 2 teaspoons zest; avoid the bitter white pith. Cut orange in half; squeeze to make 1/4 cup juice. Whisk orange zest and juice with remaining dressing ingredients in a large salad bowl.

2Chop apricots and chives; place apricots, chives and cranberries in dressing to soak at least 10 minutes.

3Right before serving, add salad greens to serving bowl; toss with dressing, dried fruit and chives. Sprinkle with cheese, if desired. Serve immediately.
