Ingredients

6cupsshredded Napa cabbage (1 small head),

4ouncesfresh snow peas,

1/2c.finely chopped red onion,

1/3cupchopped Gundelsheim Barrel Garlic Pickles OR Hengstenberg Cornichons,

2tablespoonstoasted sesame seeds (see note below),

*optional garnish: crisp chow mein noodles,

*Dressing:,

1/4cupGundelsheim White Vinegar,

2tablespoonsHill Country Fare Vegetable Oil,

2tablespoonssugar,

1tablespoongrated fresh gingerroot, optional,

Directions

1Cut cabbage in half and remove core. Slice cabbage very thinly to shred.

2Pull and discard strings from snow peas; cut in half, lengthwise. Chop red onion and pickle.

3Toss cabbage, onion, snow peas, pickle, and sesame seeds in a large bowl; set aside.

4Combine dressing ingredients in a small bowl. Pour over cabbage mixture and toss to coat and combine. Season to taste.

5Serve immediately or refrigerate for later serving time. Toast sesame seeds in a small skillet over Medium heat 3 to 5 minutes or until lightly browned.
