Ingredients

2bunchesromaine hearts,

10ounce bagMatchstix™ carrots (3 cups),

1large cucumber,

1/4c.diced red onion,

2 to 3tablespoonschives, cut into 1-inch pieces,

2tablespoonshoney,

1tablespoonwhite wine vinegar,

1tablespoondijon mustard,

1/4teaspoonground black pepper,

2tablespoonsextra virgin olive oil,

1teaspoonchopped chives,

Directions

1Thinly slice romaine crosswise into shreds.

2Peel cucumber; cut lengthwise into quarters and remove seeds. Slice crosswise into thin strips. Dice onion. Cut chives into 1-inch pieces.

3Whisk honey, vinegar, mustard and pepper together in a small bowl. Slowly add olive oil, whisking constantly, until blended or emulsified. Add 1 teaspoon chopped chives.

4Toss lettuce, carrots, cucumber and onion in a large bowl with dressing. Sprinkle with chives and serve immediately.
