2cupsFrozen H-E-B super sweet corn,
12Cherry tomatoes cut into quarters,
2H-E-B Fresher Lasting® jumbo avocado halves chopped,
1/4cupChopped fresh basil,
1/2cupH-E-B Ready, Fresh Go! Chopped red onion,
2Tbsp each:H-E-B Olive Oil and H-E-B red wine vinegar,
1Cook the corn according to package directions,drain. Allow corn to cool.
2Combine corn, tomato, avocado, basil, onion, olive oil and red wine vinegar in a salad bowl. Season the salad to taste with salt and pepper.
3Gently toss the salad to coat the ingredients. Cover with plastic wrap and chill for 30 minutes.
