Toasted Chicken Melts

1French stix bread, cut into lengthwise halves,

1/3cupmayonnaise or creamy Italian dressing, regular or fat free,

1/2poundH-E-B Provolone cheese slices,

1/2small red onion, sliced into rings,

2cupsshredded or sliced H-E-B deli rotisserie chicken,

1large tomato, thin sliced or chopped,


1Heat oven to 425 degrees. Spray a large cookie sheet with nonstick cooking spray.

2Spread mayonnaise or Italian salad dressing on each French bread half. Layer with 1/2 of the Provolone cheese slices, onions and H-E-B rotisserie chicken; season to taste with salt and cracked pepper. Top with tomato and remaining sliced cheese.

3Place chicken sandwich halves on prepared baking sheet and bake 10-12 minutes until cheese is melted golden and sandwich is thoroughly heated.
