4H-E-B Fully Cooked Sweet Chili Chicken Breasts, thawed & thin sliced,
1/3cup each:mint basil & cilantro leaves,
1/3c.Hill Country Fare Spicy Peanuts,
10eachH-E-B Ready Fresh Go!® Lettuce Leaves,
1/2cupH-E-B Texas Twist Spicy Peanut Jalapeno Dressing,
1Heat 4 cups of water over high heat until boiling. Add the rice vermicelli and stir until vermicelli is soft (about 1 minute). Remove from heat and allow rice vermicelli to soak for 3 minutes. Drain, rinse and drain the rice vermicelli. Cut the rice vermicelli into 3 inch lengths and set aside.
2Combine the rice vermicelli, thin sliced sweet chili chicken, mint, basil, cilantro, and peanuts in a large mixing bowl. Toss the ingredients gently to coat, cover and chill for 15 minutes or until ready to serve.
3 Spoon 1/3 cup of sweet chili chicken mixture on each lettuce leaf and top with 1 teaspoon Spicy Peanut Jalapeno Dressing. Fold or roll the lettuce wrap like a taco. Place lettuce wraps on a platter and serve chilled.
