12Tia Rosa corn tortillas, cut into thin strips,
1(14.5 ounces) canHatch Enchilada Sauce,
1/2(32 ounces) packageH-E-B Easy Melt Queso Blanco, cubed,
1(7 ounce) containerH-E-B Ready Fresh Go Chopped Onion,
1(14.5 ounce) canH-E-B Diced Tomatoes & Green Chiles,
1(12 ounce) packageH-E-B Fully Cooked Seasoned Beef Crumbles,
1Heat oven to 450 degrees F. Spray a 2 1/2-quart microwave-safe baking dish with nonstick cooking spray; set aside.
2Combine tortilla strips, enchilada sauce, cheese, onion, diced tomato with chiles, beef crumbles and cilantro in a large bowl; toss to coat ingredients. Pour enchilada mixture in prepared baking dish. Cover dish loosely with plastic wrap and heat in microwave oven for 5 minutes on High power.
3Remove plastic wrap and bake on the center oven rack for 10 minutes until cheese is bubbly.
