Roast Beef Flautas

Ingredients

1 1/2cupsshredded roast beef,

4slicesonion, cut in half and separated,

2fresh jalapenos, seeded and cut into thin strips (optional),

1package(12 count) corn tortillas,

2cupsHCF shortening,

Directions

1Combine shredded roast beef, onion and jalapeno strips in a medium-size bowl.

2Heat tortillas until soft.

3(To heat tortillas in microwave, remove twist tie from package and heat in plastic bag on High power for 1 to 2 minutes or until soft and pliable.

4Spread 3 tablespoons roast beef mixture down the center of each tortilla and roll tightly, one at a time.

5Secure each flauta with a toothpick and set aside.

6Heat shortening in a heavy skillet over medium-high heat or a deep fryer to 375 degrees.

7Fry 4 flautas at a time for 2 minutes, turning once during frying.

8Remove flautas and place paper towels to drain
