1 1/2 to 2lbs.boneless beef top sirloin steak, cut 3/4 to 1-inch thick,
4clovesgarlic, crushed or minced,
1/4cupfresh squeezed lime juice (1 to 2 limes),
2tbsps.red wine vinegar,
1tbsp.chopped fresh oregano leaves,
1tsp.coarse ground black pepper,
1Combine marinade ingredients in a 1-gallon sealable plastic bag. Add steak to bag; seal bag and toss to coat. Place in refrigerator to marinate 12 to 24 hours
2Remove steak from refrigerator; let stand (in marinade) at room temperature 10 to 30 minutes while preparing grill.
3Heat charcoal 30 minutes until covered with a light layer of gray ash or heat gas grill 10 minutes with lid closed. Grill steak 4 inches above Medium heat (375-degree grill surface temperature). Cook 3/4-inch steak 6 to 8 minutes per side or 1-inch thick steak 9 to 12 minutes per side. Remove from heat when internal temperature of steak reaches 140 degrees for Medium-Rare or 150 degrees for Medium doneness.
4Let stand 3 to 5 minutes; cut and serve
