Asian Pork with Mushroom Sauce

1poundpork sirloin chops, cut 3/8-inch thick,

4teaspoonsDragon Rub Asian seasoning,


4ouncesshiitake mushrooms,

4green onions with tops, chopped,

1/2cupdry sherry,

3/4cupchicken broth,



1Season pork on both sides with Asian seasoning. Set aside.

2Remove and discard stems from mushrooms. Chop mushrooms coarsely. Chop green onions, including tops.

3Heat a large, non-stick skillet over medium heat 2 minutes. Cook pork 2 to 3 minutes per side. Remove chops to a plate; cover to keep warm.

4Melt butter in skillet; sauté mushrooms and onions in butter 3 to 5 minutes until tender. Add sherry to skillet; boil 1 to 2 minutes or until almost evaporated.

5Dissolve cornstarch in broth. Pour over mushrooms. Return pork to skillet; simmer in sauce, turning, about 1 minute to heat through. Serve immediately.
