Strawberry Kiwi Trifle

1 (18 1/4 oz.)boxHill Country Fare strawberry cake mix,

3large eggs,

1/3cupHill Country Fare oil,

6kiwi fruit, peeled and sliced,

1pintfresh strawberries, washed, stems removed, and halved,

1 (16 oz.)containerHill Country Fare frozen whipped topping,


1Heat oven to 350 degrees.

2Spray a 9 x 13-inch baking dish with non stick cooking spray or grease with softened margarine and dust with 2 tablespoons flour; shake out excess.

3Combine cake mix, eggs, oil, and 1 1/4 cup water.

4Mix for 2 minutes on medium speed with an electric mixer.

5Pour cake batter into prepared baking pan and bake on center oven rack for 35 minutes or until done.

6Let cake cool in pan on cake rack for 20 to 30 minutes and then cut into one-inch cubes.

7For assembly: Cover bottom of 3-quart trifle or punch bowl with half of the cake pieces.

8Spread 1 1/2 cups whipped topping over cake pieces and sprinkle with kiwi slices and strawberry halves.

9Repeat layers topping off with remaining whipped topping and fruit.

10Cover with plastic wrap and chill for 15 minutes or more.
