24Cupcake Paper Liners,
2cupsH-E-B the baker’s scoop low protein flour,
1 1/2cupsH-E-B sugar,
3tespoonsHill Country Fare baking powder,
1cupH-E-B 2% milk,
1/2cupHill Country Fare shortening,
1tespoonHill Country Fare vanilla,
1Heat oven to 350F. Insert cupcake paper liners in two 12-cup muffin pans.
2In a large bowl combine the flour, sugar, baking powder, salt, milk and shortening.Mix the batter with an electric mixer on low speed until the batter is moistened(about 30 seconds). Increase the speed to medium and beat the batter for2 minutes. Add the vanilla and eggs; continue to beat the batter at medium speedfor 2 more minutes. Pour the batter into the prepared muffin pans.
3Bake the cupcakes on the center oven rack for 20 minutes or until a toothpickinserted in the center comes out clean. Cool the cakes completely and removefrom pans.
4Ice the cupcakes with frosting.
