1/2 cup white or brown sugar,
1/2 cup butter,
1 teaspoon vanilla,
2 1/2 cups sifted all-purpose flour,
2 teaspoon double-acting baking powder,
1/2 teaspoon salt,
1 In a large electric mixing bowl, cream sugar with the butter until light and fluffy.
2 Beat in vanilla, eggs, flour, baking powder, and salt.
3 Divide dough into 3 balls.
4 Place in sealable plastic bags and chill 3 to 4 hours before rolling.
5 Preheat oven to 375 degrees and grease two cookie sheets.
6 Using a rolling pin, roll the dough out into 1/4 inch thickness and cut desired shapes with cookie cutters.
7 Use a metal spatula to transfer cookies to prepared baking sheets.
8 Top with colored sugar if desired.
9 Bake approximately 10 to 12 minutes or until lightly browned.
10 Remove from cookie sheet and cool. Decorate with icing, coconut, candies, or whatever you like.
