Ingredients

1can12-oz H-E-B Evaporated Milk,

2eggs, beaten,

1can(16 oz) solid pack pumpkin,

2tablespoonmargarine, melted,

2teaspoonvanilla,

3/4cupsugar,

1/2cupBiscuit and Baking Mix,

1tablespoonPumpkin Pie Spice,

*whipped topping (optional),

Directions

1Preheat oven to 350 degrees (375 degrees for glass dish).

2Butter an 8x8 inch baking dish.

3Combine all ingredients except whipped topping in a medium mixing bowl.

4Beat 2 minutes with an electric mixer or 100 strokes by hand.

5Pour into prepared baking dish.

6Bake in preheated over for about 60 minutes or until knife inserted in center comes out clean.
