Golden Walnut Caramel Squares

1cupH-E-B All-Purpose Flour,

1/2cupH-E-B Butter,

3TbspH-E-B Sugar,

1/3cupNestle Semi-Sweet Chocolate Morsels,

2002-01-01cupH-E-B Sugar,

1/3cupHill Country Fare Light Corn Syrup,

1cupH-E-B Butter,

1cupH-E-B Heavy Whipping Cream,

1pkg (16 oz)Azar Walnut Pieces,

1ozUnsweetened Chocolate (melted over very low heat),

1Candy Thermometer,


1Heat oven to 350ºF. Grease an 8-inch square panwith butter and set aside.

2For crust, combine the flour, butter and sugar in a medium-size bowl. Mix the these ingredients with an electric mixer on low speed for 1 minute. Press the crust mixture in the prepared pan. Prick the crust with a fork several times and bake on the center oven rack for 15 minutes. Remove the crust from the oven and sprinkle with the Nestle Semi-sweet chocolate morsels. Allow to cool for 2 minutes and then spread the melted morsels over the crust.

3For the filling, place 1 1/3 cups sugar in a heavy saucepan and melt the sugar over medium low heat (stirring constantly) until it is golden colored. This will take about 15 to 20 minutes. Once the sugar is caramelized, add the corn syrup, butter and cream. Stir the caramel mixture constantly over medium low heat until the temperature reaches 240ºF (use a candy thermometer).

4Immediately remove the caramel syrup from the heat and stir in the chopped walnuts. Immediately pour this caramel walnut mixture over the prepared crust. Smooth the caramel mixture evenly.

5Carefully melt the unsweetened chocolate in a heavy saucepan over medium low heat. Drizzle themelted chocolate over the caramel walnut layer. Cool the caramel walnut mixture and then cut into1-inch squares
