Fresh Cherry Crisp Cobbler

2 1/2cupsH-E-B All-Purpose Flour,

1/2teaspoonH-E-B Salt,

3/4cupHill Country Fare Shortening,

1tablespoonH-E-B Sour Cream, regular or fat-free,

1/2cupplus1 tablespoon chilled water,

2poundsfresh cherries, pitted,

1/2cupH-E-B Sugar,


4tablespoons (3.5 ounH-E-B Butter, unsalted,

1/2cupdry one-minute oatmeal,

1/4cupH-E-B All-Purpose Flour,

1/2cupbrown sugar,

1teaspoonalmond extract,


1For Flaky Crust: 1.

2In a large bowl, sift flower and salt.

3Using an electric mixer on low speed, add shortening and mix for 1 minute until mixture looks like coarse meal.

4Add sour cream to flour mixture and mix with your fingers.

5Gradually add chilled water and continue to mix with your fingers until the dough holds together.

6Form dough into a flat ball, wrap in plastic wrap and chill for 30 minutes.

7For Filling: 1.

8Heat oven to 350 degrees F.

9Spray a 2-quart baking dish with nonstick cooking spray.

10Roll dough out into a large rectangle to fit the baking dish.

11Crimp edges with a decorative design.

12Combine cherries, sugar, cornstarch and 1 cup water in a saucepan and bring to a boil over Medium heat.

13Cook until sauce thickens.

14Pour cherries and sauce into prepared crust.

15Combine butter, oatmeal, flour, brown sugar, and almond extract in a processor bowl.

16Process mixture for 30 to 40 seconds until mixture is chunky.

17Sprinkle crumb mixture over cherries.

18Bake cobbler on center oven rack for 35 to 40 minutes until cherry sauce is bubbly
