1Line a muffin pan with 12 extra large aluminum foil baking cups.
2Place an H-E-B pecan treasure cookie in each foil baking cup. Scoop 1/4 cup H-E-B Creamy Creations pineapple ice cream over each cookie. Top each ice cream filled cup with another H-E-B pecan treasure cookie and gently press cookie over ice cream.
3Cover pan with plastic wrap or foil and freeze for 30 minutes or more. Once cookie coolers are frozen, place in a large freezer storage bag.
