Bobbing for Apples Cake

3/4cupdried apples,

1cupapple cider,

1cupapplesauce, at room temperature,

1 1/2cupsall purpose flour,

1tsp.baking soda, pie spice,


1large egg, at room temperature slightly beaten,

1stickunsalted butter, melted and slightly cooled,

1tsp.vanilla extract,



1Pre-heat oven to 325°F. Spray an 8"x8" pan with non-stick cooking spray and set aside.

2Add dried apples and cider to a saucepan and simmer mixture until cider has reduced to almost dry.

3Combine apples and applesauce in a food processor and puree until smooth.

4Combine flour, baking soda, apple pie spice and salt in a bowl.

5In a large bowl, combine egg, butter, vanilla and sugar. Cream together. Once smooth add applesauce mixture.

6Mix in dry ingredients with a whisk. Pour batter into prepared pan,and bake for 30 minutes.
