4cupsdiced unpeeled apples,
1cupcoarsely chopped walnuts,
1Preheat oven to 325 degrees F.
2Oil a 9x13-inch pan.
3Beat eggs, sugar, oil and vanilla in large mixing bowl.
4Combine flour, baking soda, cinnamon, nutmeg, and salt.
5Mix into liquid ingredients.
6Fold in apples and nuts.
7Spread into prepared pan.
8Bake 50 to 60 minutes or until cake tests done.
10For frosting: Combine 2 3-ounce packages cream cheese, softened; 1/4 cup butter or margarine; 1 1/2 cups powdered sugar; and 1/2 teaspoon vanilla extract in small mixing bowl.
11Whip until smooth and spread over cake
