Apple Cake

1/4cupgranulated sugar,

2tablespoonall-purpose flour,

1 1/2teaspoonground cinnamon,

5cupsliced, peeled cooking apples,

2 1/2cupall-purpose flour,

1 1/2cupgranulated sugar,

1 1/2teaspoonbaking powder,

1/2teaspoonbaking soda,

1cupcooking oil,


1/4cuporange juice,



1Grease and lightly flour a 10-inch fluted tube pan.

2Set aside.

3In a large mixing bowl, combine 1/4 cup sugar, 2 tablespoons flour and cinnamon.

4Add apples; toss gently to coat.

5Set aside.

6In another large mixing bowl, combine 2 1/2 cups flour, 1 1/2 cups sugar, baking powder and baking soda.

7Add oil, eggs, orange juice and vanilla.

8Beat with an electric mixer on low to medium speed for 30 seconds.

9Beat on medium speed for 2 minutes.

10Pour 1/3 of the batter (about 1 1/2 cups) into the prepared pan.

11Top with half of the apple mixture.

12Spoon another 1/3 of batter over the apples in pan; top with the remaining apple mixture.

13Spoon the remaining batter over apples.

14Bake in a 350 degree oven about 1 1/4 hours or till a wooden toothpick inserted near the center comes out clean.

15Cool in pan on a wire rack for 15 minutes.

16Remove from pan.

17Cool completely on wire rack.

18Drizzle with powdered sugar icing.

19Let cake stand 1 to 2 hours before slicing.
