Spicy Squash Casserole

2poundszucchini or yellow squash (about 4 medium), shredded,

1cupbread or cracker crumbs,

2cups(8 oz) shredded jalapeno jack cheese,

2eggs, beaten,

1/2cupchopped onion,


1Heat oven to 350 degrees.

2Spray a 2-quart casserole dish with non-stick cooking spray.

3Cook squash in 2 cups of water over high heat for 5 minutes; drain and return to cooking pot.

4Add remaining ingredients; stir to combine.

5Season to taste with salt and pepper.

6Pour mixture into prepared dish.

7Bake uncovered for 20 minutes
