2cupsH-E-B Tortilla Chips, crushed,

2cupsCheddar Cheese, shredded,

1cupH-E-B Ready,Fresh,Go! Pepper & Onion Strips,

1largeTomato, thin sliced,

1/4c.cilantro, chopped,

8H-E-B Grade A Large Eggs, beaten until frothy,


1Heat oven to 300F. Spray a 2 quart baking dish with non-stick cooking spray, set aside.

2Layer the tortilla chips, cheese, pepper & onion strips, tomatoes and cilantro in prepared baking dish. Pour the beaten eggs over the layers. Bake on center rack for 25 minutes or until a knife inserted in the center comes out clean. Cut into squares and serve
