8hard-cooked H-E-B Eggs,
1tablespoonHill Country Fare Mustard,
2tablespoonsHill Country Fare Pickle Relish,
2Hill Country Fare Pimiento-Stuffed Green Olives, sliced into circles,
1/4cupcarrot matchsticks, for bunny whiskers,
1/4red bell pepper triangles, for bunny ears,
1Peel hard-cooked eggs and slice into halves. Place egg white halves on a plate and set aside.
2Combine the hard-cooked egg yolks, mayonnaise, mustard, parsley and pickle relish in a small bowl. Mash and stir egg-yolk mixture with a fork or electric mixer. Season to taste with salt and pepper.
3Place egg-yolk mixture in a zippered bag and snip off a 1/2-inch hole from the corner of the bag. Evenly squeeze the mixture into the 16 egg-white halves. Decorate eggs with olive slices for eyes, carrot matchsticks for whiskers, and red bell pepper triangles for ears
