1Tbsp.canola oil,

1cupH-E-B H-E-B Ready, Fresh Go! Chopped 3-color peppers,

4cupsH-E-B Tortilla Chips crushed,

6large eggs beaten,

1cupH-E-B Fresher Lasting Salsa Fresca mild or hot,

1cupH-E-B Shredded Mexican Blend Cheese,


1Heat a skillet over high heat for 1 minute. Add oil and peppers to hot skillet and stir-fry for 2 minutes.

2Add chips, beaten eggs and salsa fresca to peppers, reduce heat tomedium low and stir-fry for 1-2 minutes or until eggs are cooked. Sprinkle with shredded cheese and serve
