Ingredients

2cupsall-purpose flour,

1cupsugar,

1 1/2teaspoonbaking powder,

1teaspoonsalt,

1/2teaspoonbaking soda,

3/4cuporange juice,

1tablespoongrated orange rind,

2tablespoonsshortening,

1egg, well beaten,

1/2cupchopped walnuts or pecans,

1 1/2cupfresh or frozen cranberries, coarsely chopped,

Directions

1Preheat oven to 350 degrees.

2Grease bottom only of 9 x 5 x 3-inch loaf pan.

3In large bowl, mix together flour, sugar, baking powder, salt, and baking soda.

4Stir in orange juice, orange rind, shortening, and egg.

5Mix with electric mixer at medium speed until well blended.

6Stir in nuts and cranberries.

7Pour into greased pan.

8Bake for 55 minutes or until toothpick inserted into center comes out clean.

9Cool on rack 15 minutes before removing from pan.

10return to rack to completely cool before covering with plastic wrap
