2 cups milk,
1/2 cup yellow cornmeal,
1 tablespoon butter,
1 teaspoon salt,
1 cup fancy shredded sharp cheddar cheese (4 ounces),

1 Heat oven to 375°F. Spray a 1 1/2-quart casserole or baking dish with non-stick cooking spray.
2 Heat milk in a 1-quart saucepan over medium-high heat. Before milk reaches boiling point, slowly stir in cornmeal; add butter and salt. Reduce heat to medium; stir and cook until slightly thickened, about 5 minutes. Remove fromheat.
3 Beat eggs in a medium bowl; gradually whisk in hot cornmeal mixture until smooth.
4 Stir in cheese and pour into prepared dish. Bake 40 minutes. Let stand 5 minutes. Serve with a spoon.
