Tortilla Stacks

12Mission corn tortillas,

1(12 ounce) packageH-E-B Fully Cooked Taco Beef Crumbles,

1/2cuponion, chopped,

1(14.5 ounce) canHunt's diced tomatoes with green chiles, drained,

1(15.5 ounce) canRosarita refried beans,

1(8 ounce) bagshredded H-E-B Monterey Jack cheese,


1Heat a large skillet over high heat for 3 minutes.

2Add 1/2 cup Wesson oil and fry tortillas, one at a time, for a few seconds on each side to soften.

3Drain fried tortillas on paper towels and set aside.

4Place H-E-B fully cooked taco crumbles in a large microwave-safe bowl according to package directions.

5Add the tomatoes to the beef crumbles; stir and set aside.

6Spray a 9 x 13-inch baking pan with non-stick cooking spray.

7Spread each fried tortilla with 3 tablespoons refried beans.

8Place the first two tortillas on the bottom of the prepared baking dish.

9Sprinkle each tortilla with 1/3 cup shredded cheese.

10Place the second layer of tortillas over the cheese and top each one with 1/3 cup beef and tomato mixture.

11Continue with two more layers of tortillas ending up with the beef mixture.

12Sprinkle the remaining cheese over the two tortilla stacks.

13Spray one side of plastic wrap with non-stick cooking spray and cover casserole.

14Heat in microwave oven on Medium power for 10 minutes.

15Serve with salsa and sour cream
