1bag (16 oz.)H-E-B steamable rice with corn & poblano or spanish rice,
1cupH-E-B shredded mexican or jalapeno jack cheese,
1cupHill Country Fare all purpose baking mix,
2cupsHill Country Fare Canola Oil,
1jarH-E-B salsa picante any flavor,
1Prepare the H-E-B Steamable Rice according to package directions and cool.
2Combine the cooled rice, shredded cheese, eggs and baking mix in a large mixing bowl. Season the mixture with salt and pepper and set aside.
3Heat a skillet and oil over medium high heat for 4 minutes to 375F. Form the rice batter into balls, using about 2 Tablespoons for each ball. Drop into the hot oil and press gently with the back of a spoon to flatten slightly. Fry the rice bites for 1 minute on each sideuntil golden. Drain the rice bites on paper towels.
4Serve the rice bites warm on a platter with a bowl of salsa picante
