Chex & Caramel Corn

Children can help out with almost every step of this recipe. Be sure to use hot pads when taking the caramel mixture out of the microwave.

4 1/2c.Chex Cereal (Corn, Rice or Combination),

4c.popped popcorn,

1/2c.H-E-B Cashew Halves or H-E-B Honey Roasted Peanuts,

1/4c.butter or margarine,

6Tbsp.packed brown sugar,

2Tbsp.light corn syrup,



1Mix cereal, popcorn and nuts in large microwaveable bowl; set aside.

2Microwave butter, brown sugar, corn syrup and vanilla in large microwaveable bowl uncovered on high about 2 minutes, stirring with spoon after 1 minute, until mixture is boiling. Pour over cereal mixture; stir with spoon or rubber spatula until evenly coated.

3Microwave 5 to 6 minutes, stirring and scraping bowl after every minute. Spread on waxed paper to cool, stirring occasionally to break up pieces. Store in airtight container.
