Mediterranean Grilled Peach and Feta Salad

2Tbsp.H-E-B Extra Virgin Olive Oil,

1tsp.fresh oregano leaves, chopped,

1juice and zest lemon,

1Tbsp.H-E-B Mediterranean Honey,

•salt and pepper, to taste,

1c.Central Market™ Organics Lemonade,

4largefresh peaches, each sliced into 8 wedges, with stones removed,

2Tbsp.H-E-B Extra Virgin Olive Oil,

2c.Central Market™ Organics Herb Salad Mix,

2H-E-B Fresher Lasting® Jumbo Avocado Halves, thin sliced or chopped,

½c. pitted and halvedH-E-B Mediterranean Medley Olives (optional),

1hothouse cucumber, sliced lengthwise, seeded and thin sliced,

1c.H-E-B Crumbled Feta Cheese, regular or reduced fat,


1Combine olive oil, oregano, lemon juice, zest, and honey in a salad cruet or jar, season to taste with salt and pepper, and set aside.

2Combine lemonade and peaches in a bowl, toss gently, and drain. This will keep the peaches from turning brown. Combine peaches and olive oil in a baking pan, toss to coat, and set aside.

3Layer salad mix, avocado, olives, cucumber slices, and feta cheese in a salad bowl or on a platter. Drizzle dressing over salad, cover with plastic wrap, and chill while peaches are grilling.

4Prepare charcoal or gas grill for cooking (375°F) and spray a grilling mesh with nonstick cooking spray. Place peach slices on the mesh and grill for 3 minutes on each side. Top salad with grilled peach slices and toss lightly. Serve immediately or cover and chill until ready to serve.
