Ingredients

2 tsp.olive oil,

1smallonion, sliced,

2carrots, peeled & cut into coins,

1lb.brussel sprouts,

1headbroccoli, trimmed into florets,

1pintmushrooms, sliced,

*Sauce,

1Tbsp.cornstarch,

1/2c.Central Market Organics Low Sodium Chicken Broth,

2Tbsp.low sodium soy sauce,

1Tbsp.chipotle in adobo, minced,

Directions

1Heat skillet to medium-high and add oil.

2When oil is shimmering, add onions and cook until tender.

3Add carrots and Brussels sprouts, stirring frequently. Cook 2 minutes.

4Add broccoli and mushrooms, and cook an additional 2 minutes stirring occasionally.

5While veggies cook, whisk cornstarch and broth together until combined; blend in soy sauce and chipotle.

6Add sauce mixture to veggies, and cook 1 to 2 minutes or until sauce thickens.

7Remove from heat and serve.
